Shelter Canggu is an architectural tribute to tropical brutalism softened by lush botanical cascades and rich teak accents. Conceived by culinary visionary Stephen Moore, the restaurant immerses diners in an open-air pavilion where natural earth textures and dramatic mood lighting mirror the rustic yet refined nature of the Levant. Flavors here celebrate the warmth of Middle Eastern and Mediterranean woodfire cookery. The slow-roasted lamb shoulder falls apart at the touch of a fork, lifted by tart pomegranate molasses, rich whipped labneh, and warm za'atar flatbread straight from the stone oven.
