SURABAYA, Indonesia - September 26, 2026 - Sazón Bali is bringing its Canggu-born cuisine to Surabaya this weekend, partnering with Uppercut Steakhouse at JW Marriott Surabaya for “Across the Table: Where Soulful Flavours Meet the Flame,” a three-evening collaboration running from September 25 to 27.

The programme pairs Sazón Bali's Mediterranean-influenced open-fire cooking with Uppercut's dry-aged meats and Josper-fired techniques as part of JW Marriott Surabaya's Flavours Beyond Borders culinary series.

According to Indonesia Expat, the collaboration brings together Chef Andrew Walsh and Chef Gunartha Tude, also known as I Putu Gede Gunarta, for a four-hands dining experience.

From Canggu to Surabaya

Sazón Bali has built its reputation around open-fire cooking, Mediterranean-inspired flavours and communal dining.

At Uppercut, those elements meet a steakhouse programme centred on premium meats and Josper cooking, creating a menu that combines the two restaurants' techniques rather than presenting them separately.

Six courses built around the flame

The dinner features six courses, beginning with Wagyu beef tartare, octopus croquette and Summer Whisper, combining feta, compressed tomato and strawberry consommé.

Guests can choose Stone Axe Striploin with black garlic jus and potato espuma or 14-day dry-aged duck with romesco and za'atar spices for the main course.

Dessert is Sazón-Misu, a contemporary take on tiramisu with coffee, amaretto and matcha.

A sharing-style lunch

The collaboration also offers a sharing-style lunch for two, beginning with Daily Catch Ceviche, corn cream and coconut leche de tigre.

The main course is Wagyu Beef Paella & Bone Marrow, served with citrus salad and patatas bravas, followed by Sticky Toffee Cake, pomegranate and burnt milk ice cream.

The format reflects Sazón's emphasis on communal dining and shared plates.

The Surabaya appearance gives Sazón Bali an opportunity to present its Canggu culinary identity to diners in another major Indonesian city.

The engagement follows other September collaborations involving Bali-based chefs. Bali Buddies reported appearances in Jakarta, while InClover Magazine identified the Surabaya programme as the closing collaboration in the September series.

The collaboration is underway

Across the Table began on Friday, September 25, and is scheduled to continue through Sunday, September 27, at Uppercut Steakhouse, JW Marriott Surabaya. Indonesia Expat describes the programme as a three-evening dining experience.

The six-course dinner is priced at Rp888,000++ per person, while the sharing lunch costs Rp688,000++ for two people, according to Indonesia Expat and IDN Times.

For Sazón Bali, the engagement brings its Canggu culinary identity to Surabaya for a limited three-day run, giving local diners a chance to experience the restaurant's cooking without travelling to Bali.
